If you want your kids to eat their greens you need to start early and be persistent according to the findings of a new study. Researchers studied children aged 4 months to 3 years of age who were offered artichoke puree between 5 and 10 times during the intervention period. They measured their intake of the puree before and after the intervention. While 21% were ‘plate-cleaners’ and ate most of the vegetable puree, 40% of the children increased their intake over time – in other words, the more they were offered, the more they learnt to eat. Only 16% remained ‘non-eaters’, consuming little of the artichoke puree, but this was more common in older children suggesting that it is best to start early. Interestingly, those who increased their intake did so regardless of whether the vegetable puree was offered plain or sweetened.
